It has been a long, hot, summer. Ups and downs around every corner. That’s the only way I can explain my delinquency in writing. All in all it was great. Now that fall is approaching it’s time to get back into a routine. Part of that is our weekly food prep.

We have been eating strict and not so strict paleo for three months and at this point I can’t imagine not eating this way. It seemed daunting at first but one of the things that makes it easier is preparation. Balancing work schedules, dogs, CrossFit, running, “free time;” throw paleo cooking on top of it and it can get daunting. To make it easier we generally spend Sunday afternoon prepping food for the week. Our standbys are:

  • Chicken salad (w/ homemade paleo mayo)
  • Paleo granola
  • Sunflower seed hummus
  • Veggie sticks
  • Boiled eggs
  • Salad dressing

Getting this out of the way on the weekend really helps free up time during the week. It has been a huge help to us not having to worry about getting lunch stuff ready every day.
